Job Description:

El Catrin serves authentic, traditional and modern Mexican cuisine. The Executive Chef will be responsible for building the team, coaching team members and developing Back of House team members. The role is responsible for the overall operations of the kitchen, including maintaining high standards and efficient systems to ensure success. The Executive Chef will be responsible for developing, implementing and managing strategies for the organization of the kitchen, overall costing and culinary execution.

Terms of the Position:

  • Start Date: As soon as possible
  • Hours: Full-time, permanent/indeterminate position (44 hours/week with possible overtime)
  • Salary: $80,000/year to $100,000/year (to be negotiated)

Job Duties:

  • Lead restaurant operations, including developing, planning and implementing Mexican cuisine menus and supervising and training sous chefs and cooks
  • Prepare a variety of Mexican dishes, including moles and traditional masa cookery and train sous chefs and cooks in preparing, cooking and plating dishes and cooking techniques
  • Consult with clients regarding special functions, weddings, banquets or other events
  • Consistently direct and monitor kitchen operations, cleanliness and sanitation policies
  • Conduct staff recruitment and selection, training and development initiatives as well as performance management and employee coaching
  • Conceptualize new menu offerings and present these offerings to the Senior Leadership team and investors
  • Oversee ordering of equipment and supplies, inventory and receiving procedures
  • Communicate the restaurant’s vision to all team members and lead by example
  • Reinforce the DRC’s values and beliefs daily and inspire the team with exciting vision for the restaurant’s future
  • Build and maintain relationships while managing team members and Back of House management alike
  • Lead restaurant culture that revolves around the experience and enjoyment of food and cooking
  • Demonstrate high personal integrity, business ethics and take every opportunity to promote the restaurant
  • Identify any problems that arise in the kitchen and resolve them quickly
  • Lead team by example to exhibit, encourage and motivate DRC’s values and beliefs


  • Work experience: Minimum of eight (8) years progressive experience within the culinary industry with a minimum of four (4) years of experience in an Executive Chef position focused on Mexican Cuisine
  • Education: At least 2 years of culinary training is required (e.g., culinary diploma, degree, or an equivalent apprenticeship program)
  • Must have culinary experience and passion for Mexican cuisine with a focus on authentic and modern regional ingredients, flavour profiles, and dishes
  • Demonstrate ability to lead culinary execution in a high-volume (200+ seat) restaurant
  • English is required, Spanish is an asset but not required
  • Demonstrate computer literacy with Microsoft Windows applications and point-of-sale software
  • Demonstrate a passion and drive to create incredible tasting dishes incorporating imagination and uniqueness
  • Demonstrate strong problem solving abilities and a drive to improve performance
  • Demonstrate exceptional leadership abilities, including possessing strong relationship building and communication skills
  • Able to work in a fast-paced, changing environment.

Working Conditions:

  • Kitchen environment – noisy, high temperatures, fast-paced, physically demanding etc.
  • Frequent lifting and carrying of items up to 80lbs
  • Standing, bending, crouching, kneeling and walking required
  • Must be flexible to work on days, evenings, nights, weekends and holidays
